Diane Kochilas, cooking, tours, greeceDiane Kochilas is an internationally known food writer, cookbook author, culinary teacher and food consultant. Her articles have appeared in The New York Times, Gourmet, Saveur, Food & Wine, Eating Well and in other food and general-interest publications.

In Greece, she is the weekly food columnist and restaurant critic for the country’s largest newspaper, Ta Nea. She has written 17 books in both English and Greek on Greek and Mediterrranean cuisine, including the award-winning The Glorious Foods of Greece. She is the owner of the Glorious Greek Kitchen cooking school on the island of Ikaria and she is consulting chef and partner at New York’s Pylos restaurant, one of the top-rated Greek restaurants in the city as well as consulting chef at Avli Restaurant in Chicago.

She is also a consultant for Hellenic Gourmet, the duty free food shops at the Venizelos International Airport and around Greece, to help upgrade the store’s selection and source product. Her knowledge of Greek regional foods, wines, and culinary lore is extensive.

Glorious Greek Kitchen on  the island of Ikaria

Ikaria, GreeceClasses takes place in the ancient village of Agios Dimitris in a gorgeous stone house with a spectacular view of the sea. Students stay in a top accommodations on the beach, which is 10 minutes away. The week begins with a Sunday welcome dinner at sunset. Every day is filled with excursions to local food artisans and island sites.

They usually cook in the afternoon and enjoy dinner in the garden. Each cooking day has a theme, such as Vegetarian Greek, Fearless Phyllo, Meze, Delicious Fish, etc.)

All recipes are designed so that you can make them once you get back home. Diane and Vassili introduce you to Greek wines and spirits, to the cheeses of Greece, to Greece's unique honey varieties, regional olive oils, and much more. The week is as much an immersion in the ancient but timeless food ways of Greece as it is in the country's culture.

They take you to the island's ancient hot springs and to its local village festivals, dates permitting. They keep an organic garden and much of what you will eat is picked that day. Their philosophy is to promote the healthful, flavorful, simple, friendly foods of Greece and to give students plenty of ideas and recipes they can use in their own kitchens.

CLASS SIZE: Up to 8 for hands on
MINIMUM ATTENDANCE: 5 students
